The past couple of days in Nashville have been a little chilly compared to the hot days we’ve been getting lately. I made this vegetable soup a while ago and I think this weekend would be a great time to make it again before the temperatures climb back into the 80s.
One of the things I love about vegetable soup is that it is so adaptable. I used this basic recipe and added the veggies I wanted. I also love that you can use vegetables that are fresh, frozen, or a combination of both.
- Two tablespoons olive oil
- 1 medium onion, chopped
- 2 teaspoons Italian seasoning
- 3 (14.5 oz) cans vegetable broth
- 2 (14.5 oz) cans diced tomatoes, with juice
- 1 tablespoon tomato paste
- 2 medium russet potatoes, peeled and diced
- 4 carrots, peeled and diced
- 1 cup cut green beans
- 2 cups peas
- 2 cups corn
Heat oil in a large pot over medium heat. Add the onions, Italian seasoning, salt, and pepper. Cook until onions are translucent, about 5 minutes. Stir frequently.
Add broth, tomatoes (with juice), tomato paste, and 3 cups of water. Bring all of this to a boil then reduce the heat to a simmer. Cook, uncovered, for 20 minutes.
Add all of the veggies to the pot. Bring the mixture back to a simmer. Cook until the vegetables are tender, about 30 minutes.

It does, however, have to do with the fact that I AM GRADUATING IN 9 DAYS. Can we just talk about that for a second? I think I am in disbelief. I have a final this Friday and then it’s over. That’s it. We had our first senior breakfast today with all the nursing students and faculty. It was a lot of fun. I have had some really incredible professors these last few years and it will be weird not being able to drop in their offices on my way to class. It was great to have everyone together one last time before graduation today.
My dear friend Sadie took some photos for me to send out with my graduation announcement, so I decided to post a couple of them here too. We went to Hillsboro Village and took some pictures in Fido and some out in the neighborhood. I thought it was appropriate since I have probably spent more time there than at my own apartment during nursing school.
As seen in the first picture, I started underlining and writing notes in my textbook this semester. I never wanted to mess up the pages of a book when I got it, but I now realize that isn’t messing it up at all. I’m not quite sure what took me so long to realize this considering I have had several people in my life that encourage writing in books. Now all of my books are covered in notes. I guess that’s what happens I get so inspired by a professor that I actually want to read all of the chapters in the second half of my nursing book.
9 days to go, everyone. I can’t wait to celebrate with my friends and family. Now to lock down a job…that’s the fun part, right?
I don’t think I need to tell you about my love for lace dresses (especially cream ones) again. There are enough pictures on this blog to tell you that. My friend Katie got this dress at Urban Outiftters. She is kind enough to let me wear it. I absolutely love it. I wore it with my favorite oversized sweater and Topshop booties. I was able to get away with wearing it still because we haven’t had any super cold days in Nashville yet. This morning was a little on the chilly side though!

On Tuesday I went to a little Nashville blogger meet up at Stone Fox. It was so great to meet everyone! I had a lot of fun hanging out and I hope to see everyone again soon. I really liked Stone Fox. It was my first time to go there. One of the other bloggers told me that there was a Weezer cover band there over the weekend!! I hope to go next time they play.
